The celebrated one-Michelin-star restaurant Sra Bua by Kiin Kiin returns with more innovative Thai gastronomy.

Welcome back the renowned one-Michelin-star restaurant Sra Bua by Kiin Kiin at Siam Kempinski Hotel Bangkok with “Summer Journey” and the new “Story of Gems Juice Pairing” menu, available now until 30 November. Sra Bua by Kiin Kiin is the home of modern Thai gastronomy, where exquisitely composed dishes are prepared using global cooking techniques and best-quality seasonal ingredients.

The secret to the 2021 “Summer Journey” set menu is the collaboration between award-winning Michelin-star chef Henrik Yde-Andersen and chef Chayawee Suthcharitchan, the head chef at Sra Bua by Kiin Kiin. These culinary masterminds have once again joined hands to create dishes based upon the delicious tastes and refreshing flavours found with the best-quality summer seasonal ingredients. 

The “Summer Journey” set dinner menu, comprising eight tantalising courses, begins with Sra Bua by Kiin Kiin’s famous “street food” nibbles, such as salted egg yolk with crab roes; moon food edible bag of puffed rice flavoured with celery, tom ka meringue and mushroom; mushroom shot with ginger-stuffed morel, soy caviar with wasabi; and more.

Tom Yum with Cilantro Waffles and Relish Based on Dried Codfish with Lime Leaf Marinade

The first course of the captivating set dinner features an innovative presentation of “Tom Yum Kung” with DIY instant tofu noodles served with cilantro waffles from a Danish recipe, topped with a Thai-style salsa of relish based on dried codfish with lime leaf marinade and a side dish of homemade prawn cracker with raw shrimp. The second course presents fluffy Norwegian smoked salmon and salmon roe with the bursting flavours of Thai mango salad. The highlight of the third course is an Asian twist on

buttered Japanese miso with flan and oysters served with the Danish pancake ball “Æbleskiver” and dried shrimps. The fourth course features Chef Chayawee’s homemade curry paste recipe from Ranong province mixed in a crab and asparagus red curry soufflé baked in banana leaves and served with lobster bisque. The fifth course presents pan-seared French foie gras with Thai tamarind and pear chutney served with homemade duck confit and foie gras “dim sum” with local chilli vinegar sauce from Trang province. The main course features Australian beef short ribs sous vide for 48 hours at 62 degrees served with the famous Thai Massaman sauce, sunchoke purée and local Thai jasmine rice from Surin province.

Pineapple Tartar with Coconut, Turmeric, Thai Herbs and Rum Snow

This extraordinary culinary journey continues perfectly with a truly refreshing dessert to cool down from the heat of summer, featuring Phuket pineapple tartar with coconut, turmeric, Thai herbs and rum snow; and tea ice cream with kaffir lime zest compote; before concluding in style with the imaginative and very creative petit fours.

The “Story of Gems Juice Pairing” has been thoughtfully created to complement each course of the “Summer Journey” menu. The menu begins with the “Red Garnet Gem of Apple and Celery Juice,” which represents “Eternity,” served with the classic Tom Yum Kung soup, which has become the taste of Thailand. There is a perfect combination of red apple juice from Doi Angkang, which balances the spicy and sour flavours, and celery from Doi Suthep, which helps reduce the spiciness of the Tom Yum soup very well.

Additionally, the “Yellow Sapphire Gem of Passion Fruit and Yuzu Juice” represents “Words of Wisdom,” served with buttered miso, flan and oyster course, using the skilled cooking techniques of Chef Henrik to enhance the flavours of both Western and Eastern culture to make the flavours in this dish perfect. The Japanese yuzu orange is high in vitamin C, while the passion fruit from Trang province helps freshen up and open the palate. 

Lastly, the “White Pearl of Pineapple and Passion Fruit Juice” represents beauty and peacefulness. The freshly squeezed Phuket pineapple juice mixes with passion fruit juice and Thai coconut milk in a soft yellow colour, similar to the Andaman pearl of Thailand. This is served with a beautiful finale dessert presentation, ending with the mist of the snow. 

Juice Pairing

This Summer Journey set menu is available at Sra Bua by Kiin Kiin until 30 November 2021 with selections of set lunch menus of four courses and six courses; and set dinner menus of six courses and eight courses.

The Summer Journey set menus are priced as follows: Four courses – THB 1,850++; 

Six courses – THB 2,600++; Eight courses – THB 3,200++.

Additional Story of Gems Juice pairings are priced as follows: Four courses – THB 390++; Six courses – THB 590++; Eight courses – THB 790++.

Additional wine pairings are priced as follows: Four courses – THB 1,200++; Six courses – THB 2,000++; Eight courses – THB 2,300++.

*All dining prices are exclusive of 7% government tax and a 10% service charge.

Sra Bua by Kiin Kiin is open for luncheon from 12:00 noon to 15:00 hrs (last orders at 13:30 hrs), with dinner served between 17:00 hrs and 20:00 hrs (last orders for at 17:30 hrs) every Friday till Sunday. The restaurant is located on the lobby floor of Siam Kempinski Hotel Bangkok.
